Cupcake of the Month: Almond Apricot
There are a few reasons why this month's Cupcake of the Month, Almond Apricot, were just really awesome.
I'm sure I've mentioned this before, but there are trends in cupcake flavors. Everyone knows that Red Velvet is really hot right now, but all the sudden in the last six months or so, we've been making a TON of almond cupcakes. Almond flavoring is really popular in desserts and pastries, and you can see it in described variously as frangipane or amaretto, depending on where the almond flavor comes from and how the dessert is made.
We've found almond to be an excellent pairing with both caramel and seasonal fruit like strawberries and stone fruits. Right now, apricots are in season and the pairing was suggested a few months ago by Sara (pictured here mixing some apricot frosting) who provided the fruit from a friend's farm. We definitely feel blessed here in California to have access to really stunning locally grown fruit!
As is the case with the cupcake of the month flavors, we like to provide subscribers with at least two variations. This time we did two options: almond cake topped with apricot buttercream (with pureed fruit mixed right into the vanilla frosting), and almond cake, vanilla frosting, filled with house-made apricot jam. The jam is pictured here with some jars of brandied cherries that we made at the same time, using California-based Korbel brandy and organic bing cherries.
Later, I made another variation for a wedding that was almond cake with vanilla frosting, topped with the same jam, caramel, and almond pieces. You can see those pictured here with the place card.
Of course, every month, someone declares the Cupcake of the Month flavor the most amazing yet! This one was quite popular, and I really enjoy using the subscriptions as an opportunity to experiment with new flavors. You can see all of the upcoming flavors here, but coming up soon we have White Chocolate Raspberry in August and S'mores in September. We're going to be adding to the schedule, and I think there is a high likelihood of either a peanut butter & jelly cupcake or beer cupcakes (with Macarthur Garage Brewery) showing up soon!
